Devil's Food Cake

2 cups flour 1 3/4 cups sugar (I use demerara) 1/2 tsp baking powder 1 1/4 tsp baking soda 1 1/4 tsp salt 3/4 cup cocoa 2/3 cup soft shortening (I use margerine) 1 cup water 1 1/2 tsp vanilla 3 eggs * (see note) 1. Sift flour, sugar, baking powder, baking soda, salt and cocoa together. 2. Add shortening (margerine) half water and vanilla. 3. Beat for 2 minutes. 4. Add water and eggs. Beat 2 minutes. 5. Turn into prepared tins. Bake at 180 degrees Celcius (350 degrees Fahrenheit) for 30 to 40 minutes. The cake is done when you put a fork or toothpick in and it comes out clean. * note: 1 egg can be replaced with either of the following, but don't expect it to rise as it would with eggs: - 1 heaping tablespoon ground flax (flax meal) and 2/3 teaspoon boiling water or - 1/4 cup rice milk
I use the subsitution of 1 egg=1/4 cup soy yogurt (vanilla or flavoured, take your pick). If I get a chance sometime I'll post some yummy icing recipes that would work well on this cake.
