Quinoa and Corn - a Simple Side Suggestion

If you're not familiar with it, Quinoa is a grain that originates in South America and is relatively high in protien. It's quick and easy to prepare when dry. You just rinse it and put it in boiling water for a few minutes (one cup Quinoa will soak up one cup of water).

Quinoa is often used as a base (like rice would be) with vegetables.

I first tried it a year or more ago and for some reason my first instinct was that it needed crushed red pepper. I prepared it as a side and cooked a can of corn with dinner the same night. Since then, when I make quinoa, I also heat up a can of corn. Just mix the two and season with some hot red pepper.
